# Restaurant accountant in *Winnipeg*

Winnipeg restaurants work around a short, intense patio season and a long winter when the trade moves indoors. The Exchange District, Osborne Village, Corydon and the Forks each have their own rhythm, and game nights and concerts downtown shape the week as much as the weather.

EverStone is a CPA firm serving [Winnipeg businesses](https://www.everstonecpa.com/accountant-winnipeg) remotely, with [hospitality accounting](https://www.everstonecpa.com/restaurant-hospitality-accounting) at a fixed fee.

**Quick answer:** A Winnipeg restaurant collects two sales taxes, 5% GST and Manitoba’s 7% RST, and both have to be set up correctly in the point of sale. Add tips through payroll, a till that must agree with the bank, and food cost that moves with the seasons, and you have most of the year’s accounting. EverStone handles it with the corporate return at a fixed fee. Published fees start at $325 a month for bookkeeping and $125 for a personal return.

The year-end covers the T2 with Schedule 1 and Schedule 50, the CCA schedule, the small business deduction, T4 or T5 slips for the owner’s pay, and the instalments for the year ahead.

Owners with a food production side should also read the [Winnipeg manufacturer page](https://www.everstonecpa.com/manufacturer-accountant-winnipeg). The [Winnipeg accountant page](https://www.everstonecpa.com/accountant-winnipeg) covers the wider Manitoba picture.

## Two sales taxes on one bill

Manitoba does not harmonize. A restaurant charges 5% GST, administered by the CRA, and may also have to charge the 7% retail sales tax, administered by Manitoba Finance, with its own registration and its own returns. RST can apply to prepared meals and to liquor under rules that depend on the item and the sale, so the point of sale has to know which tax applies to which button.

RST also reaches what you buy. Kitchen equipment, smallwares and supplies used in the business can carry RST, while ingredients that become part of a meal you sell generally do not. Filing both returns on time, from the same set of numbers, is most of the compliance work. [GST filing in Winnipeg](https://www.everstonecpa.com/gst-hst-filing-winnipeg) covers the federal side, and the [Manitoba tax facts page](https://www.everstonecpa.com/manitoba-tax-facts) sets out the rates.

## Tips on a Manitoba payroll

Card tips paid out through payroll and pools the house distributes are generally controlled tips, so income tax, CPP and EI are withheld and remitted with wages. Cash tips a guest gives straight to a server are reported by the employee. With most bills now paid by card, the payroll side is carrying more tips than it did a few years ago, and the settings need to reflect that.

Restaurant staff are covered by WCB Manitoba, and once annual payroll passes the exemption the Health and Post-Secondary Education Tax Levy applies. A group with two or three locations can cross that threshold together. The [tip reporting guide](https://www.everstonecpa.com/blog/restaurant-tip-reporting-payroll-canada) and [payroll in Winnipeg](https://www.everstonecpa.com/payroll-services-winnipeg) cover the detail.

Turnover is the other payroll cost. Every departure needs a record of employment filed promptly, vacation pay settled on the final cheque, and a T4 the following February for someone who may have left in May. Seasonal hiring in spring and layoffs in autumn double that work in a single year. The [record of employment guide](https://www.everstonecpa.com/blog/roe-record-of-employment-canada) and the [vacation pay guide](https://www.everstonecpa.com/blog/vacation-pay-rules-canada-employers) cover the steps that most often slip.

## Closing the till so it matches the bank

Every shift ends with a cash-out: the float counted back, the drawer counted, card batches settled, and an over or short recorded. Those small numbers, logged every night, are what make the monthly books believable. When they are skipped, a year-end reconciliation turns into guesswork about which deposit belonged to which day.

We match POS totals, processor settlements, delivery app remittances and bank deposits each week, with each source recorded gross and its fees shown separately. A pattern of shortages on one shift shows up in weeks rather than at year-end. [Bookkeeping in Winnipeg](https://www.everstonecpa.com/bookkeeping-winnipeg) explains how the monthly service runs.

## Food cost when supply lines are long

Winnipeg sits a long way from most of the country’s produce, and winter prices show it. A menu costed in August can be losing money by February if nobody reprices the plates that depend on imported ingredients. Monthly counts and current supplier prices turn food cost from a year-end surprise into a number you can manage.

We code purchases by category, report food, beverage and labour cost monthly, and flag the items whose margin has slipped. The [inventory count guide](https://www.everstonecpa.com/blog/year-end-inventory-count-canada) covers what the year-end count must support.

## Patio season pays for February

The warm months carry the year. Patios, festivals and tourists lift sales for a few months, then the cold settles in. GST and RST returns, source deductions and rent come due on their own dates whatever the weather, so the restaurants that last set aside tax money in July rather than looking for it in January. The [seasonal cash flow guide](https://www.everstonecpa.com/blog/managing-cash-flow-seasonal-business-canada) shows a simple method.

Common questions

## Winnipeg accounting for restaurants and hospitality businesses FAQ

**Does RST apply to restaurant meals in Manitoba?**

It can. RST applies to prepared meals and to liquor under rules that depend on the item and the sale, and it is registered and filed separately from GST with Manitoba Finance. Confirm your menu categories rather than assuming GST alone covers them. [Ask about your case →](https://www.everstonecpa.com/quick-question)

**Do we pay RST on kitchen equipment?**

Generally yes, on equipment and supplies you use in the business. Ingredients that become part of a meal you sell are generally not taxed on purchase. Keep the two kinds of purchase coded separately.

**Do card tips have to go through payroll?**

In most cases. Tips the employer collects and pays out are generally controlled tips and run through payroll with withholdings, while cash given directly to a server is treated differently.

**When does the Manitoba payroll levy apply to a restaurant?**

Once annual Manitoba remuneration passes the exemption; the threshold is on the Manitoba tax facts page. Associated employers share one exemption, which matters for multi-location groups.

**How do we handle a slow winter without falling behind on tax?**

Move GST, RST and source deductions to a separate account when they are collected, so the money is there when the return is due. If you are already behind, the CRA and Manitoba Finance both work with owners who contact them early.

**Is a patio build-out deductible right away?**

Usually not. A patio, a new walk-in or a renovation in leased space is a capital cost recovered through capital cost allowance over several years. RST paid on the equipment becomes part of that cost. Timing the work around year-end changes when the deduction starts.

**Do you work with restaurants across Winnipeg?**

Yes — downtown, the Exchange, St. Boniface, Osborne and every other neighbourhood, plus Steinbach and Selkirk. Everything runs online by video, phone and secure upload.

**What does an accountant cost for a Winnipeg restaurant business?**

Winnipeg businesses pay the same published fees as everyone else. Monthly bookkeeping starts from $325 a month and a personal return from $125; a corporate return is quoted after we review your enquiry. A single question can go to a 45-minute Advice Call, a flat fee of $225 + GST. Every fee is fixed in writing first. [See the published fees](https://www.everstonecpa.com/pricing).
